These three words can't really find any French equivalent. You say that someone is a stalker when they'll do almost anything to gather as much information as possible about a person that they are obsessed with. Someone mentally ill for instance will try and follow the person she is addicted to hours long so as to know every detail about him/her: identity, habits, relatives and friends, etc...
Stalking may be quite harmless; you may have all had a crush for the man / woman in front of you at the supermarket and tried to follow them as you were leaving to possibly exchange a quick glance... however if your investigation didn't stop there and became some kind of harassment, that would be "serious stalking".
As far as etymology is concerned, the word has the same root as "steal"; and this is exactly what you do when you stalk someone. You take away some of their privacy.
